  • 1/2 cup unsalted butter (softened)
  • 3/4 cup light brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/4 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sweetened shredded coconut (toasted optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and light brown sugar until smooth.
  3. Add the egg and vanilla extract; mix until well combined.
  4. In another bowl, whisk together flour, baking soda, salt, and half of the shredded coconut. Gradually add this to the wet mixture while mixing on low speed until just combined.
  5. Gently fold in the remaining shredded coconut by hand.
  6. Scoop dough onto a greased or lined baking sheet about two inches apart.
  7. Bake for 9-11 minutes until edges are set but centers remain soft.
  8. Cool on the baking sheet for a few minutes before transferring to a cooling rack.
