  • 1 cup mascarpone cheese
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups strong brewed espresso (cooled)
  • 3 tbsp almond-flavored syrup
  • Ladyfinger cookies (about 7 oz)
  • 1 ½ cups cherry preserves
  • Fresh cherries (for topping)
  • Unsweetened cocoa powder (for dusting)

Instructions

  1. In a large bowl, whip the heavy cream until soft peaks form. Gently fold in mascarpone cheese, powdered sugar, and vanilla until smooth.
  2. Combine cooled espresso with almond-flavored syrup in a shallow bowl.
  3. Quickly dip each ladyfinger into the espresso mixture and line them at the bottom of a 9×9-inch dish.
  4. Spread half of the whipped cream mixture over the ladyfingers.
  5. Layer half of the cherry preserves and fresh cherries over the cream.
  6. Repeat layers with remaining ingredients.
  7. Cover with plastic wrap and refrigerate for at least six hours or overnight.
  8. Dust with cocoa powder before serving.
