  • 4 chicken thighs (bone-in, skin-on)
  • 1 tablespoon vegetable oil
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon minced ginger
  • 4 cloves minced garlic
  • 2 cups chicken broth
  • 2 cups jasmine rice
  • Salt and pepper to taste

Instructions

  1. Pat chicken thighs dry and season generously with salt and pepper.
  2. Heat vegetable oil in a large pot over medium-high heat. Sear chicken skin-side down until golden brown (5-7 minutes).
  3. Flip the chicken and add soy sauce, brown sugar, garlic, and ginger, stirring to coat.
  4. Pour in chicken broth and bring to a gentle boil before reducing heat to low. Cover and simmer for 20 minutes.
  5. Meanwhile, rinse jasmine rice under cold water. In another pot, combine with water and boil; then cover and reduce heat for 15-20 minutes until fluffy.
  6. If desired, thicken the broth using cornstarch mixed with water during the last few minutes of cooking.
  7. Serve sliced chicken over rice with broth poured on top along with green onions and cilantro garnish.
