  • 1 ⅓ cups uncooked long grain white rice
  • 2 ⅔ cups chicken broth
  • 4 tablespoons melted butter (divided)
  • 1 teaspoon minced garlic
  • 1 pound large or jumbo shrimp (peeled and deveined)
  • 1 ½ teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • ½ teaspoon cracked black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano (may sub an Italian herb blend or Herbs de Provence)
  • ½ teaspoon cayenne pepper
  • ¼ teaspoon crushed red pepper flakes

Instructions

  1. Whisk together all seasonings for the Cajun blend.
  2. Melt 2 tablespoons of butter in a skillet over medium heat. Add garlic and half the seasoning; stir in rice. Pour in chicken broth and bring to a boil before reducing to simmer.
  3. Combine remaining melted butter with shrimp and rest of the seasoning in a bowl; toss to coat.
  4. After about 15 minutes of cooking rice, add seasoned shrimp to the skillet. Cover and cook until shrimp turns pink and opaque (about 3-5 minutes).
