  • 1 medium head cauliflower (cut into florets)
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 2 Tbsp tomato paste
  • 2 cups vegetable broth
  • 1/2 cup heavy cream (or full-fat canned coconut milk)
  • 2 Tbsp fresh lemon juice
  • 2 tsp corn starch
  • 1/2 tsp ground cumin
  • 1 tsp ground turmeric (divided)
  • 3 tsp garam masala (divided)
  • 1 1/2 tsp salt (divided)
  • 2 Tbsp olive oil (divided)
  • 1 tsp paprika
  • 1/4 tsp ground cinnamon
  • Pinch of cayenne pepper (optional)
  • 1 (8-oz.) can tomato sauce
  • Fresh cilantro for garnish
  • Whole-milk Greek yogurt for garnish
  • Basmati rice for serving

Instructions

  1. In a large bowl, mix lemon juice, corn starch, cumin, half of the turmeric and garam masala, and salt. Toss in the cauliflower florets until well-coated.
  2. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sauté seasoned cauliflower until browned and tender (about 7-8 minutes). Remove from skillet.
  3. In the same skillet, heat another tablespoon of olive oil and butter. Add onions; cook until translucent (about 8 minutes). Stir in garlic, ginger, and tomato paste; cook for 2 minutes.
  4. Add remaining spices and cook for another minute before pouring in tomato sauce and vegetable broth. Bring to a boil then reduce to simmer.
  5. Stir in cream or coconut milk and return cauliflower to skillet; simmer uncovered for about 15 minutes until thickened.
  6. Serve over basmati rice topped with Greek yogurt and fresh cilantro.
