  • 2 cups granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, divided
  • 3 large eggs
  • 2 teaspoons vanilla extract, divided
  • 1 cup chocolate chips (optional)
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together cocoa powder, flour, baking powder, and salt.
  3. In another bowl, beat melted butter, eggs, 1 teaspoon of vanilla extract, and granulated sugar until well combined.
  4. Gradually mix dry ingredients into the wet mixture until fully incorporated. Stir in chocolate chips if desired.
  5. Drop rounded spoonfuls of batter onto prepared sheets, spacing them 2 inches apart.
  6. Bake for 15-20 minutes until edges are set but centers remain soft. Cool on wire racks.
  7. For the filling, cream together softened butter with brown and granulated sugar until fluffy.
  8. Add remaining vanilla extract and mix in flour and salt until combined; stir in chocolate chips if using.
  9. Once cookies cool, spread cookie dough filling on one cookie’s flat side and top with another cookie to form sandwiches.
