  • ¾ cup peach preserves
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 4 salmon fillets (about pounds)
  • 2 medium peaches (pitted and thinly sliced)
  • 2 teaspoons garlic, minced
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes

Instructions

  1. In a bowl, mix together peach preserves, olive oil, soy sauce, apple cider vinegar, garlic, salt, pepper, and red pepper flakes to create the marinade. Reserve half for glazing.
  2. Marinate the salmon fillets in the remaining mixture for at least 30 minutes.
  3. Preheat your oven to 375°F.
  4. Sear the marinated salmon skin-side up in an oven-safe skillet until golden brown (about 2-3 minutes). Flip and add sliced peaches.
  5. Pour reserved marinade over salmon and peaches.
  6. Bake for 12-15 minutes until the salmon reaches an internal temperature of 145°F.
  7. Serve garnished with fresh parsley.
