  • ½ cup whole milk, warmed
  • 2 large eggs
  • ¼ cup unsalted butter, melted
  • 2 cups whole milk (for pastry cream)
  • ½ cup granulated sugar (for pastry cream)
  • 4 large egg yolks (for pastry cream)
  • ¼ cup cornstarch (for pastry cream)
  • 2 teaspoons vanilla extract (for pastry cream)
  • Vegetable oil (for frying)
  • Powdered sugar (for dusting)

Instructions

  1. In a large bowl, mix flour, sugar, yeast, and salt. In another bowl, combine warmed milk, melted butter, and eggs. Gradually add this mixture to the dry ingredients.
  2. Knead the dough until light and airy. Cover and let it rise in a warm spot until doubled in size (about one hour).
  3. For the pastry cream, heat milk with sugar until warm. Whisk egg yolks with cornstarch until smooth; gradually mix in warm milk. Return to heat and cook until thickened.
  4. Punch down the risen dough and roll it out on a floured surface. Cut into circles.
  5. Heat vegetable oil in a deep pan to about 350°F (175°C). Fry each piece of dough until golden brown on both sides.
  6. Once cooled slightly, fill each bombolone with cooled pastry cream using a piping bag.
  7. Dust generously with powdered sugar before serving.
