  • 1 ½ pounds sweet potatoes, cut into ½” cubes
  • 4 Tablespoons olive oil (divided)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon ground coriander
  • 1 teaspoon sea salt
  • ¼ teaspoon pepper
  • 1 ½ cups green pepper, cut into 1" pieces
  • 1 cup red pepper, cut into 1” pieces
  • 14.5 ounces black beans, rinsed and drained
  • ½ cup frozen yellow corn, thawed and drained
  • 3 Tablespoons honey
  • 3 Tablespoons lime juice
  • 3 Tablespoons fresh cilantro, chopped
  • Corn or flour tortillas
  • Optional toppings: guacamole, salsa, sour cream, cheese, etc.

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss sweet potato cubes with 3 tablespoons of olive oil, spices, salt, and pepper in a bowl.
  3. Spread on a baking sheet and roast for 20 minutes, stirring halfway.
  4. In another bowl, mix green and red peppers with remaining olive oil; season with salt and pepper.
  5. Combine peppers with sweet potatoes after 20 minutes; bake for an additional 20 minutes.
  6. While roasting, mix honey, lime juice, and cilantro in a small bowl for the sauce.
  7. Add black beans and thawed corn to the roasted veggies; stir gently.
  8. Drizzle the honey lime sauce over the mixture and bake for another 10–15 minutes until heated through.
  9. Serve in warm tortillas with desired toppings.
