  • 2 Tablespoons Olive Oil
  • 4 Yellow Onions (sliced thin and evenly)
  • 2 Pounds Yukon Gold Potatoes (washed)
  • 4 Tablespoons Salted Butter (or non-dairy butter)
  • 3/4 Cup Half & Half or Full-Fat Coconut Milk or Dairy-Free Milk
  • 1 Teaspoon Kosher Salt
  • 1 Cup Parmesan Cheese (freshly grated)
  • 1 Bunch Chives (thinly chopped)
  • 2 Sprigs Fresh Thyme (stems removed)
  • 3 Leaves Fresh Sage (chopped)

Instructions

  1. Peel and thinly slice the yellow onions.
  2. Heat olive oil in a skillet over medium heat and add the onions. Cook for 40-50 minutes until golden brown and caramelized.
  3. While the onions caramelize, wash and chop the Yukon Gold potatoes into smaller pieces.
  4. Boil the potatoes in salted water for about 20 minutes until fork-tender.
  5. Drain the potatoes and return them to the pot. Mash with butter, kosher salt, and half & half (or coconut milk) until creamy.
  6. Stir in half of the caramelized onions and parmesan cheese until well combined.
  7. Serve topped with remaining caramelized onions, chopped chives, thyme, sage, and melted butter.
