  • 8 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 cups enchilada sauce
  • 1/2 cup diced onions
  • 1/2 cup sliced black olives
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the ground beef until browned; drain excess fat.
  3. Stir in the diced onions, chili powder, cumin, and garlic powder; cook for about 3-5 minutes until onions soften.
  4. Pour in 1 1/3 cups of enchilada sauce and simmer for 5 minutes.
  5. Grease a 9×13-inch baking dish; spread a small amount of enchilada sauce on the bottom.
  6. Layer half of the tortillas, followed by half of the beef mixture, half of the cheese, and half of the olives. Repeat layers.
  7. Top with remaining enchilada sauce and cheese.
  8. Cover with foil and bake for 20 minutes; uncover and bake for an additional 10 minutes until cheese is golden brown.
  9. Let it rest for about 10 minutes before slicing.
