  • 2/3 cup packed light brown sugar
  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2/3 cup mashed ripe banana (about 2 medium-sized)
  • 1/2 cup sour cream
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon table salt
  • 1 teaspoon cinnamon
  • 3/4 cup graham cracker crumbs
  • 2/3 cup whole milk
  • 1 cup miniature chocolate chips, divided
  • 1 cup miniature vegan marshmallow bits, divided

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a muffin pan with liners.
  2. In a large bowl, beat together the melted butter and brown sugar until creamy. Mix in the egg, vanilla extract, mashed bananas, and sour cream.
  3. In another bowl, combine flour, baking powder, baking soda, salt, cinnamon, and graham cracker crumbs.
  4. Gradually add the dry mixture to the wet mixture alternately with milk until just combined.
  5. Gently fold in 3/4 cup chocolate chips and vegan marshmallows.
  6. Scoop batter into muffin liners and sprinkle remaining chocolate chips and marshmallows on top.
  7. Bake for about 16 minutes or until golden brown. Cool in the pan for a few minutes before transferring to a wire rack.
