  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Clean the mushrooms with a damp paper towel. If large, cut them in half; leave smaller ones whole.
  3. In a bowl, whisk together balsamic vinegar, olive oil, garlic, thyme, salt, black pepper, and red pepper flakes.
  4. Toss the mushrooms in the marinade until well coated. Let them sit for about 5 minutes.
  5. Spread the marinated mushrooms on the prepared baking sheet in a single layer.
  6. Roast for 20–25 minutes, stirring halfway through until they are tender and caramelized.
