  • 4 slices sourdough or artisan bread
  • 4 oz brie cheese, thinly sliced
  • 2 tablespoons butter, softened
  • 1 cup fresh blackberries
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • Pinch of salt

Instructions

  1. In a small saucepan over medium heat, combine blackberries, balsamic vinegar, honey, and salt. Cook for about 5 minutes, mashing occasionally until thickened. Remove from heat and let cool.
  2. Heat a non-stick skillet over medium-low heat.
  3. Butter one side of each slice of bread generously.
  4. Place two slices in the skillet, buttered-side down. Layer with brie and spoon some blackberry mixture on top. Add another layer of brie and top with remaining bread slices, buttered-side up.
  5. Cook for 2–3 minutes per side until golden brown and cheese is melted. Let rest for a minute before slicing.
