  • 4 ounces cream cheese
  • 3/4 cup heavy cream
  • 8 ounces sun-dried tomatoes
  • 3/4 cup fresh spinach
  • 1 teaspoon Italian seasoning
  • 1/4 cup Parmesan cheese
  • 3/4 cup mozzarella cheese

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Slice chicken breasts horizontally to create thin fillets; season with salt, pepper, and half the minced garlic.
  3. In a bowl, mix cream cheese and heavy cream until smooth; add remaining garlic, onion powder, paprika, Italian seasoning, salt, pepper, Parmesan, and half the mozzarella.
  4. Spread the mixture over chicken fillets; add sun-dried tomatoes and drizzle with reserved oil.
  5. Cover with foil and bake for 20 minutes until chicken reaches 165°F (74°C).
  6. Stir in chopped spinach and sprinkle with remaining mozzarella; bake uncovered for an additional 10 minutes.
