  • 1 lb medium pasta shells
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 cup heavy cream
  • 2 cups milk
  • 1 teaspoon mustard powder
  • ½ teaspoon dried thyme
  • ¼ teaspoon garlic powder
  • 1 teaspoon hot sauce
  • 1 cup gruyere cheese, shredded
  • 2 cups cheddar cheese, shredded
  • 2 large yellow onions
  • 1 tablespoon olive oil

Instructions

  1. Slice two large yellow onions into even pieces. In a skillet over medium heat, melt butter and olive oil. Add onions and cook slowly for about 40-50 minutes until caramelized.
  2. Cook chicken in another skillet until crispy; set aside.
  3. In the same skillet where you cooked the chicken, whisk together butter and flour over medium heat to create a roux.
  4. Gradually add heavy cream and milk while stirring until smooth. Incorporate mustard powder, thyme, garlic powder, and hot sauce; bring to a gentle boil.
  5. Cook pasta until al dente; drain.
  6. Reduce heat of sauce and mix in cheeses until melted. Fold in pasta and caramelized onions.
  7. Top with chopped chicken before serving.
