  • 2/3 cup vegetable oil
  • 2 large eggs
  • 3/4 cup brown sugar (packed)
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream
  • 1 tsp pure vanilla extract
  • 23 large honey crisp apples (grated)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a nonstick pan with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, and spices.
  3. In another bowl, mix vegetable oil, eggs, both sugars, sour cream, and vanilla until smooth.
  4. Combine wet ingredients with dry ingredients gently until just mixed.
  5. Fold in grated apples and pour the batter into the prepared pan.
  6. Bake for 35-40 minutes or until a toothpick comes out clean.
  7. While cooling slightly, prepare the icing by melting butter with brown sugar and cream; whisk in powdered sugar until smooth.
  8. Pour icing over the warm cake and serve.
