  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled and sliced)
  • 690 g cream cheese (softened)
  • 100 g Greek yogurt
  • 3 large eggs (room temperature)
  • 55 g unsalted butter (melted)
  • 50 g all-purpose flour
  • 50 g brown sugar
  • 20 g rolled oats
  • 50 g brown sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat your oven and prepare the crust by mixing crushed biscoff cookies with melted butter. Press into a greased springform pan.
  2. Create the streusel topping by combining melted butter, flour, brown sugar, and oats until crumbly.
  3. Prepare the apple filling by tossing apple slices with brown sugar, cinnamon, and cornstarch.
  4. Make the cheesecake filling by beating cream cheese and sugar until smooth; then mix in Greek yogurt, vanilla extract, eggs, and spices.
  5. Layer half of the cheesecake filling over the crust followed by half of the apple mixture; repeat layers and top with streusel.
