  • 350 g Lotus biscoff cookies
  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled and sliced)
  • 690 g cream cheese (softened)
  • 100 g Greek yogurt
  • 3 large eggs
  • 50 g brown sugar
  • 1 teaspoon ground cinnamon
  • 50 g all-purpose flour
  • 20 g rolled oats
  • 2 teaspoons cornstarch
  • 75 g granulated sugar
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 175°C (350°F).
  2. Crush Lotus biscoff cookies and mix with melted butter. Press into a springform pan to form the crust.
  3. Prepare the crumble topping by mixing melted butter, flour, brown sugar, and oats until crumbly.
  4. Toss apple slices with brown sugar and cinnamon.
  5. In a bowl, beat cream cheese and sugar until smooth, then incorporate Greek yogurt and eggs.
  6. Layer half the cheesecake batter over the crust, add spiced apples, then top with remaining batter and crumble mixture.
  7. Bake for 50-60 minutes until set but slightly jiggly in the center. Cool completely before refrigerating.
