  • 340 g all-purpose flour
  • 225 g granulated sugar
  • 125 g butter (room temperature)
  • 225 g sour cream (room temperature)
  • 120 g all-purpose flour (for crumb topping)
  • 200 g dark brown sugar
  • 1 tbsp maple syrup (for glaze)
  • 1 1/2 tbsp granulated sugar (for apple filling)
  • 1 1/2 tsp ground cinnamon (for apple filling)
  • 1 tsp ground cinnamon (for crumb topping)
  • ½ tsp ground cinnamon (for cake)
  • 2 1/4 tsp baking powder
  • 1/2 tsp salt
  • 40 g vegetable oil (e.g., canola oil)
  • 3 eggs (room temperature)
  • 1 1/2 tsp vanilla extract
  • 125 g powdered sugar (for glaze)
  • 1 tsp sour cream (for glaze)
  • 1/2 tsp vanilla extract (for glaze)
  • 12 tsp water (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. Prepare the apple filling by tossing diced apples with granulated sugar and ground cinnamon; set aside.
  3. For the crumb topping, mix flour, dark brown sugar, ground cinnamon, and softened butter until crumbly; set aside.
  4. In a large bowl, combine flour, baking powder, salt, ground cinnamon, softened butter, granulated sugar, eggs, sour cream, vegetable oil, and vanilla extract. Beat until smooth.
  5. Pour half of the batter into the prepared dish; layer half of the apple mixture and half of the crumb topping. Repeat with remaining batter, apples, and crumbs.
  6. Bake for about 70 minutes or until a toothpick comes out clean from the center.
  7. While cooling, whisk together powdered sugar, maple syrup, sour cream, vanilla extract, and water for glaze; drizzle over cooled cake.
