  • 1/4 cup apple butter
  • 2 tablespoons granulated sugar
  • 2 tablespoons water
  • 1 teaspoon lemon juice
  • 1 teaspoon ground cinnamon

  • 1/8 teaspoon fine sea salt
  • 2 teaspoons water
  • 1 teaspoon cornstarch
  • 3/4 cup water
  • 1/4 cup bread flour
  • 3 2/3 cups bread flour (See notes below for measuring)
  • 1/3 cup granulated sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1/3 cup plant-based milk (room temperature)
  • 6 tablespoons unsalted butter (room temperature)
  • 2/3 cup brown sugar (packed)
  • 4 tablespoons unsalted butter (for frosting)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons plant-based cream
  • 2 tablespoons apple butter

Instructions

  1. Prepare the apple filling by cooking diced apples with apple butter, sugar, lemon juice, cinnamon, vanilla extract, salt, water, and cornstarch until tender.
  2. For the dough, mix warm water and bread flour to create tangzhong; let cool. Then combine remaining ingredients in a large bowl and add tangzhong once cooled.
  3. Knead the dough until smooth and elastic before allowing it to rise until doubled in size.
  4. Roll out the dough, spread softened butter and a mixture of brown sugar and cinnamon over it, then evenly distribute the apple filling.
  5. Roll tightly into a log, slice into rolls, and let rise again before baking at 350°F for about 30 minutes.
  6. While cooling slightly, prepare the cream cheese frosting by mixing butter and cream cheese; gradually add powdered sugar and plant-based cream until desired consistency is reached.
  7. Drizzle frosting over warm rolls before serving.
