  • 3 cups powdered sugar
  • ¼ cup reduced apple cider
  • 1 tsp vanilla extract
  • Pinch of salt
  • ½ cup store-bought caramel sauce
  • Pinch of flaky sea salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, and spices.
  3. In a large bowl, cream together softened butter and brown sugar until fluffy (about 2-3 minutes).
  4. Mix in the egg and vanilla extract until well combined.
  5. Gradually add the reduced apple cider and milk; stir until blended.
  6. Slowly incorporate the dry mixture into the wet ingredients until just combined.
  7. Drop spoonfuls of batter onto prepared baking sheets and bake for about 10 minutes or until edges are lightly golden.
  8. Allow cookies to cool completely before preparing the caramel filling.
  9. For the filling, beat together softened butter, powdered sugar, reduced apple cider, vanilla extract, and salt until creamy; fold in caramel sauce.
  10. Spread or pipe filling between two cookies to assemble your whoopie pies.
