  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream or Greek yogurt
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch of allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9” square baking dish with butter. Line it with parchment paper.
  2. In a sauté pan, bring apple cider to a boil until it reduces by half (about 5 minutes). Measure out ¾ cup of the reduced cider.
  3. In a bowl, whisk together eggs, granulated sugar, brown sugar, oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt.
  4. Slowly whisk in the reduced cider until well combined.
  5. Gently fold in flour until just combined; do not overmix.
  6. Pour batter into the prepared dish and bake for 22-25 minutes or until golden brown.
  7. Allow to cool slightly before topping with melted butter and sprinkling cinnamon sugar on top.
