  • 2 cups digestive cookies or graham crackers
  • ½ cup melted butter
  • 3 cups fresh apple cider
  • 3 bricks of cream cheese, softened
  • 1 cup brown sugar
  • 1 cup sour cream
  • 3 large eggs
  • Mulling spices (for flavor)
  • 2 tablespoons all-purpose flour

Instructions

  1. Reduce the apple cider with mulling spices in a pot until you have about 1/3 cup left; let cool.
  2. Preheat oven to 350°F (175°C). Blend digestive cookies, melted butter, salt, and powdered sugar until moist. Press into an 8” springform pan and bake for 10 minutes.
  3. Lower oven to 325°F (160°C). Beat cream cheese and brown sugar until smooth. Mix in sour cream, vanilla, salt, cinnamon, and the reduced cider.
  4. Add eggs and flour gently until just combined.
  5. Pour filling into the crust and bake in a water bath for about 90 minutes or until edges are set with a wobbly center.
  6. Cool gradually in the oven for 30 minutes, then chill overnight before serving.
